I recently shared on Instagram a few things I’ve been doing to improve my well-being, health, and life. Most of what I’ve been doing has been focused on improving my sleep, getting up earlier, encompassing an exercise routine in my daily life, taking vitamins, and listening to what my body needs. But, another thing I’ve been trying to do is have breakfast.
I don’t know what it is with me and breakfast, but I just have never been able to get into a good habit of having it every day. I know there is a lot of back and forth information on having breakfast vs. fasting until later in the day, but the fact is that I just feel better when I eat something in the morning before I start my day. I’ve tried fasting and while I felt like it was good for my gut health, I did notice that my energy took a hit and I definitely missed feeling a bit more energetic!
I’ve been making overnight oats for years now. Though I am not much of a breakfast person, if I am going to have breakfast I tend to have either overnight oats or oatmeal. In the spring and summer, I make my overnight oats with berries and fruit but in the winter I go for something a bit more decadent and hearty.
Meal Prep
I talk about meal prepping a lot on my Instagram stories and often share my meal-prep routines on there. I love meal prepping. The weekdays get quite busy and exhausting, and at the end of the day, the last thing I want to do is cook dinner or prep breakfast for the next day. That’s why I like to utilize my Sundays to prep most of our meals. This Peanut Butter Chocolate Overnight Oats recipe is great because you can so easily prep a couple of days’ worth of breakfasts by just doubling up the recipe.
Peanut Butter Chocolate Overnight Oats
Ingredients:
1 cup rolled oats
2 tbsp of peanut butter (or almond butter)
1-2 tbsps of ground flaxseed (optional)
2 tsp cocoa powder
1 tsp vanilla
1 tbsp honey (Add more if you use unsweetened peanut nut or almond butter)
1 cup of milk (or milk substitute)
Pinch of salt
Instructions:
Mix all ingredients together.
Put ingredients into either jars or containers
Leave in your jar fridge overnight.
In the morning, the oats will have softened and you can enjoy your delicious Peanut Butter Chocolate Overnight Oats!
