Slow Cooker Potato Celery Soup
Winter, for me, is all about cozy warm comfort meals. I love making big batches of soup (especially this hearty potato celery soup – yum!), oatmeal, and oodles of casseroles filled with our favourite comfort dishes.
I love to make meals that have lots of leftovers which is one of the reasons I love making soups so much. This healthy potato soup makes about 6 servings so we get multiple days of leftovers out of it. It’s also quite an easy meal to make as all you need to do is chop up all your ingredients, add them all into your crockpot (along with your liquid ingredients) for a few hours and then serve up and enjoy.
Can I Only Use the Vegetables Noted in the Recipe?
You can also easily change up this recipe by adding in different vegetables to change the flavour. Sometimes I’ll add in squash, leeks, or sweet potato to make the recipe a bit different.
Can I add cheese on top of my soup?
Of course! Is there anything more delicious than cheesy potato soup? I personally love to add a handful of cheddar cheese on top of my soup – but you can use any cheese you like!
Any recommended sides for this meal?
One thing I absolutely LOVE having on the side of this soup is a Sourdough Jalapeno Biscuit. They are the perfect thing to dunk into your heart old fashioned potato soup. Plus, they are also very easy and very quick to make – they only have a few ingredients and take about 30 minutes to whip up.
Do I have to make this in a slow cooker?
If you don’t have a slow cooker then you can use a stockpot instead to make this chunky potato soup. Just make sure you watch the heat and check your soup regularly.
Hearty Potato Celery Soup
Ingredients:
- 1 tbsp olive oil
- 7 large potatoes (cubed)
- 1 Cup Red Lentils
- 2 onion (diced or rough-cut)
- 4 stalks celery (cut in crescents)
- 3 carrot (chopped)
- 4 cloves garlic, minced
- 9 cups water
- 2 tsp salt
- 1-2 tsp garlic salt
- 3-4 bay leaves
- freshly ground black pepper to taste
- Optional: 1/2 – 1 Jalapeno (if you like spice)
Instructions:
Start by chopping all your vegetables. You can either chop them with a rough cut for a more rustic style soup, or you can dice them. I tend to go for a more rustic style.
Drizzle olive oil into your crockpot.
Add in your chopped vegetables, lentils, and liquid ingredients.
Add in your seasoning ingredients (salt, garlic salt, bay leaves, and pepper) and stir the ingredients in.
Cover and cook on high for about 4 hours. If the potatoes are not yet cooked, place soup on high for an additional 1-2 hours.
Once all the vegetables are cooked through, serve your soup and enjoy!
